Very limited white wine from a single vineyard Pinot Noir. Why Gypsy One? Because whoever says Gypsy One becomes one. It is a white-pressed* Pinot Noir that was fermented with stems to ensure a significant tannin content. More José than Rosé.
* neologism alert. "White-pressed" means that black grapes are harvested and pressed yielding white or rosé juice as the colour is in the skins and the juice is in the fruit. Leave the must in contact with the skins for a few hours and the must will pick uo some colour, just a bit, to make it rosé.
